banana and blueberry icy poles

The weather is certainly warming up and there is nothing better on a hot day than a tasty icy pole, ice cream or frozen yoghurt.

A couple of years ago, I was given these great icy pole moulds for the kids and I have only used them a couple of times. Now that the kids are a little bit older, I can see them getting a lot more use. When the days are hot, Mark will ask for an icy pole most days after his quiet time and I see no reason not to give them one. When I get the ones from the supermarket, I will get the Berri 100% natural juice ones, as opposed to Zooper Doopers or similar.

We have had a couple of bananas that are definitely over-ripe, so I decided that they would be suitable candidates for our first batch for this Summer. I essentially put all the ingredients into the blender and made a thick smoothie, then poured it into the moulds – so simple. If you don’t have icy pole moulds, you could just freeze it into a container and scoop it out, like you would frozen yoghurt, as desired.

Make sure you make these a day before you want to eat them to make sure they are sufficiently frozen, although a good 8 hours in the freezer should be plenty. Needless to say, these were a hit!

Ingredients:

  • 2 ripe bananas

  • 3/4 cup frozen or fresh blueberries

  • 1/2 cup natural yoghurt

  • 1/2 tsp ground cinnamon

  • 1/2 cup milk

  • 1 tsp honey (optional)

 

Method:

  1. Peel and place banana into blender along with blueberries yoghurt, cinnamon, milk and honey and blend until smooth. If too thick, add some extra milk.

  2. Pour into icy pole moulds and insert sticks or pour into a container.

  3. Place into the freezer and freeze for at least 8 hours or overnight.
