self-saucing chocolate pudding

There is something so warming and satisfying about a self-saucing chocolate pudding, especially on a cold night.

This self-saucing chocolate pudding is easy to make and can cook in the oven whilst you’re enjoying your dinner. I love serving this with a good scoop of vanilla ice cream, but cream also works nicely. The berries are optional, but they do cut through the chocolate quite nicely.

 
 
 
 

Growing up, we used to have self-saucing chocolate pudding for dessert on a semi-regular basis. It was a quick and easy recipe from the PMWU cookbook. This childhood recipe inspired today’s recipe, which has a few more ingredients, namely, almond meal, eggs and chocolate, which adds more protein, healthy fats and deliciousness.

The kids thought this was a pretty special way to end dinner and, obviously, wanted more.

Ingredients:

  • ¾ cup almond meal

  • ½ cup SR flour

  • 1/3 cup cocoa

  • 2 eggs, lightly beaten

  • ¼ cup maple syrup

  • ¼ cup milk

  • 60g butter, melted

  • 40g dark chocolate, melted

  • 3 tbs cocoa

  • ½ cup brown sugar

  • 350mL boiling water

 

Method:

  1. Preheat the oven to 200ºC and grease a square baking dish (22cm x 22cm).

  2. Place the almond meal, flour and cocoa into a medium sized bowl and mix to combine.Add the eggs, maple syrup and milk and mix.

  3. Add the melted butter and chocolate and mix until combined. Transfer mixture into prepared dish and spread out evenly.

  4. Place the brown sugar and cocoa into a small bowl and mix to combine and remove any lumps of cocoa. Sprinkle evenly over the mixture. Gently pour the boiling water over the top – do not stir – and place into the oven.

  5. Bake for 35-40 minutes. Enjoy with ice cream or cream and some fresh berries.
